Al dente angel hair pasta paired with golden-brown sautéed shitake mushrooms, perfectly boiled edamame, topped with in-house made vegan caviar and roasted kizami nori seaweed. Seasoned with shio kombu and served chilled with Sudouku’s take on the traditional Japanese condiment – Mentsuyu.
Our vegan mentsuyu sauce is made with a copious amount of roasted nori seaweed and vegetable dashi which elevates the level of umami in the dish. Glazed with the sauce, our pasta offers a savoury and sweet finish attributable to the shoyu contained in the mentsuyu. This dish is an umami bomb that will satisfy the most discerning umami addict.
